I’ve always been fascinated by cooking outdoors using real wood and getting the toughest pieces of meat to be tender and flavorful. To do that its important to learn the basics and go through the trial and error phase (otherwise known as torturing your friends with inedible burnt crispy stuff). I do firmly believe that Big Green Eggs are the outright enemy of proper Southern Smoking, and no Redneck worth his Bud Light should be caught dead near one!
